  1. Preheat oven to 375 degrees F. Coat shallow baking dish or jelly roll pan (for squares) with nonstick cooking spray.
  2. In a mixing bowl, beat egg with a fork until frothy, add ground turkey, 1 1/4 cups salsa, oats, garlic, oregano, cumin, salt and pepper. Mix thoroughly. Transfer mixture to the prepared baking pan and shape into a 9 x 5- inch loaf or flatten for squares. Spray top of meatloaf with cooking spray and spread remaining 1/2 cup of salsa over top.
  3. Bake 50 to 60 minutes or until meat thermometer registers 160 degrees F when inserted in the center.
  4. Serve with additional salsa if desired.
