Ingredients:
1 kilo / 2 pounds potatoes
1/2 kilo ground beef
1/2 chopped onion
1 cup tomatoes from a can
1/2 glass red wine
1 cup of olive oil
1/2 cup chopped parsley
Salt, pepper and nutmeg
For the topping:
1 liter milk/2 pints
1 cup flour
1/2 cup of butter
2 eggs
Grated cheese
Procedure:
1. If you want a plain old Mousaka you can remove the potatoes. But traditionally, Greeks find it tasty when this dish is served with them.
2. Boil the potatoes and stop half way (15-20 min.). Peel them and let it aside aside
3. Fry now the onion in the oil until brown and transparent. Afterwards, add the ground beef and wait for 10 minutes. Stir the mixture well so as to blend the onion taste with the beef. Afterwards, add the red whine. Red whine is preffered since you’re cooking with meat. Add the tomatoe, parsley, salt, pepper and about a tablespoon of sugar, and then add 1/2 cup of water.
4. Wait until the water is absorbed by the meat. Remove the mixture from the heat and add the grated cheese and the egg yolks. The egg whites will be used for the toppings.
5. In a saucepan bring three cups of milk to boil and then mix the flour with the remaining cup and pour stirring constantly, making a thick paste.
6. Remove from heat, and add the egg yolks, egg whites and the nutmeg.
7. Butter a baking pan, and then put the sliced potatoes in it. Cover with the meat mixture and then cover with the contents of the saucepan.
8. Remove the baking pan from the oven if the topping is already browned.
